CREAMY MISO SOUP WITH MOCHI

This is a soup which they served the day I had lunch as the Amsterdam KI. It is delicious! Preparation time - 10 minutes. (Serves 2)
 
1 big onion, diced
1/2 fresh corn on the cob
3 x 3 inch piece mochi, cut in very small pieces
2 soup bowls water
1 teaspoon sesame oil
1-2 teaspoons rice miso, diluted in a little water
1 scallion, diced (for garnish)

 

Sauté the onion in the oil until transparent. Add a pinch of salt and a little water and cook until the onions are tender. Bring the two bowls of water to a boil and add to the cooked onions. Cut the corn off of the cob and add the kernels and the mochi to the soup. Boil until the mochi is dissolved. Turn down the fire and add the miso. Let simmer for 3-4 minutes. Serve with the finely cut scallion on top.
