GARLIC FRIED RICE
(Khao Phat Kra-thiam)
 
3 T. cooking oil
 1 tsp. chopped garlic
 1c. cooked basmati rice
 1 1/2 T. chopped shiitake mushroom
 1 T. sliced garlic
 1 T. light soy sauce
 cucumber, carrot, onion cut on matchstick pieces, for garnish.

 

In a wok, heat the oil until it is hot and then add the chopped garlic and saute until it is golden. Add the rice and mushrooms and mix well together. Season with the soy sauce, add the sliced garlic and stir fry until the garlic is done. Serve hot, garnished with the matchstick vegetables.
