HIZIKI WITH VEGETABLES
(One cup of hiziki contains 610 mg of calcium.)
 
1/2 package hiziki
1 carrot, cut into matchsticks
1/2 onion, cut into half moons
1 tablespoon sesame oil
1 tablespoon shoyu soy sauce
1 cup spring water

 

Rinse the hiziki and soak it for about 10 minutes. Discard the soaking water. Put the hiziki into a pot with the cup of spring water. Bring to a boil and simmer with the lid on for about 1/2 hour.
In a skillet, sauté the onion and the carrot in the sesame oil. Add the vegetables to the hiziki and simmer lightly for about 5 minutes. Season with the shoyu and simmer for another three minutes. You can add peanut butter and sauerkraut after the dish is cooked for added richness.
