ONIONS WITH VINEGAR
2 large onions
salt
3 tablespoons brown rice vinegar
fresh parsley, minced
Cut the onions in half moons and sprinkle with a little salt. Combine
with the other ingredients and let marinate for 1 hour before serving.
Cucumber and Fennel Salad
1 large cucumber, finely diced
1/2 bulb fennel, finely sliced
pinch sea salt
1 tablespoon olive oil
2 tablespoons lemon juice
2 scallions, finely sliced
Combine all the ingredients; let marinate for 1 hour before serving.
