PRESSED SALAD

½ medium sized cucumber
½ teaspoon of sea salt
Generous sprinkle brown rice vinegar

Cut the cucumber in half, length ways, then finely slice each of the halves. Place in bowl and gently massage the salt in with your hands. Place a small plate on top, and a weight, such as a jug of water. Leave to stand for 30- 60 minutes. Drain liquid away, and sprinkle with brown rice vinegar. (If it tastes too salty, you can rinse with water before adding the vinegar.
